I didn't have time to post last night, therefore I'm posting this a day late as this occurred yesterday (Sat 4/7/12).
The last time my friend was in town for work, we were talking about White Chicken Chili so she jotted down the recipe for me and I made it yesterday. I made the chili with 1 lb boiled shredded chicken, 1 jar of medium salsa, 1 can Great White Northern beans, 1 can pinto beans, 1 can kidney beans, 1 can chili beans, 1 can diced tomatoes, 1 can green chilies, onion, red pepper, cilantro, and cumin. I cooked it in my CrockPot on low for 6 hours. I served it with shredded cheddar cheese and sour cream. It was really good chicken chili, I'm glad we have leftovers!
